Only workouts that are part of your weekly plan count towards your streak. Completing a scheduled workout on its assigned day continues the streak.
Missing a scheduled workout day will break your streak. Rest days (days with no workouts scheduled) do not break your streak.

Total volume is the sum of (reps × weight) for every completed set in the current weekly cycle. It's a great way to measure your overall workload.
